Located outside of the city centre in the residential area of Bishan, a neighbourhood better known for local food stalls than authentic Italian eateries, Rubato attracts a crowd that takes its food seriously. Ingredients are handpicked, pastas are homemade and cooked a la minute, and pizzas are cooked to perfection in a wood-fired oven. In fact, the Chef Specialities vary each day depending on what owner, Marcus Edwin Wu, finds on his nightly journey to Jurong Port, where he selects the freshest seafood to serve.
With the food taking centre stage, Rubato is a place where serious foodies can focus on great food. The restaurant offers a casual, understated atmosphere, where it feels like you’re eating in your very own kitchen. Hanging wire lamps accent the dining room’s décor of simple wooden tables and plain white walls.
"Chef Wu wasn't kidding about his insistence on using the best ingredients. From the milky and wonderfully creamy burrata from Puglia and the intensely flavourful 36-month aged parma ham, to the juicy home-cured Roma tomatoes, the a la carte menu of antipasti is easily one of the most impressive selection we've ever sampled, a, pun unintended, symphony of delightfully fresh flavours and contrasting textures. "And for all its unlikely setting, a residential estate up near MacRitchie; a good proving ground built surely not a permanent recipe for success, relative newbie Rubato does a solid job on all fronts." -I-S Asia-City
"It seems out of place in a row of run down eateries and hawker stalls, but don't let the neighbours fool you - this place serves a menu that holds it's own against some our city's most exclusive dining areas. We are almost a little sad to let this cat out of the bag, as we wanted to keep this bellissimo gem all to ourselves." -The Honeycombers
The hustle and bustle of the city centre can often take its toll, so it's always nice to embark on a short journey away from the maddening crowd to enjoy a wholesome meal. The minute you walk into this cosy establishment, your senses are triggered by the aroma of freshly baked pizza, a fantastic way to whet your appetite. Baked in a custom-designed wood-fired pizza oven, Rubato’s pizzas are made from scratch with the freshest mozzarella and imported flour from Italy.
Before enjoying a slice of gourmet goodness, a starter of burratina con prosciutto e rucola, an ensemble of fresh artisanal stretched buffalo mozzarella, aged parma ham, baby arugula, and extra-virgin olive oil, is a great way to begin any meal. If pizza is not your cup of tea, consider ordering the linguine al cartocci, which combines the freshest seafood, roma tomato sauce, and al dente pasta wrapped in parchment paper. Finally, we absolutely love the squid ink pasta, which comes al dente (of course), with fresh seafood, and drenched in a darkly-hued savoury broth. We'd recommend a bib because you may find yourself slurping these delicious noodles.
