Helmed by Executive Chef Craig Schantz, the kitchen presents dishes that draw on European culinary technique, and bring together seafood, and quality produce from regional suppliers. Vegetables and herbs are from a sustainably-run farm in Malaysia, and the menu is filled with little twists that really showcase Schantz’s creativity and innate understanding of the ingredients he works with.
