Michelin Starred Chef Reine Sammut and Sommelier Manuel Rodrigues bring the taste of provincial France to Singapore in their newest inspiration Provence. Their striking lavender door on Keong Saik Road may seem odd at first, but its simplicity and bright look serves as a portal into the great French countryside. The earthy green and brown hues of the interior walls, fresh herb garden lining the countertop of their open kitchen, soft lighting, and comfortable chairs evoke warm and inviting images of relaxing at home in the garden. The décor, the concept, and the dishes are so simple; it’s like eating Mom’s home-cooking - if only your mom was a super gourmand like Chef Reine.
Provence highlights the many cooking styles of various provinces in France, but does it with a wink and nod to Sicily, Malta, and Tunis. Beware: just when you’re starting to understand the textures and flavours of each region, they are sure to catch your taste buds off guard with a surprise element!
Although the menu may seem small, they use only the freshest ingredients to bring out rich, natural flavours in every bite. Provence changes their menu not once, but twice a season and offers both a set menu (3-6 course options available) as well as a la carte. (Jul 2012)
