One of Florence's oldest gourmet shops specialising in truffle based products, Procacci's rich history dates all the way back to 1885. From its humble beginnings along Florence's upmarket shopping street, via de Tornabuoni, where it was famous for its panini tartufati (soft rolls smeared with fragrant truffle salsa), Procacci has come a long way. Singapore is privileged to be the first location outside of Europe to have a fully conceptualised Italian restaurant put together by the wine connoisseurs of the Antinori group.
Despite its fancy new digs at Fullerton’s Custom House, set against the stunning backdrop of Marina Bay, Procacci still sticks to its Italian heritage with its rustic décor, sensual mood lighting and a stunning gothic bar counter. But whether or not you decide to dine indoors under the ambient lighting, or outdoors while soaking in the enchanting view of the bay, you will not be disappointed by the hearty Italian fare.
The skill of their kitchen team is put on display though their diverse menu brimming with classics like grilled buffalo mozzarella wrapped with black forest ham and stewed osso buco, as well as, creative dishes like octopus carpaccio and penne flambé with vodka and zucchinis. It’s not often we at Chope crinkle our noses when deciding what to order at a restaurant. It was almost impossible to pick a pasta dish at Procacci, not because nothing appealed to us, but rather because everything sounded jaw-dropping amazing!
To borrow a line from Russell Peters, Procacci’s Risotto al nero di Seppia or squid ink risotto with sautéed squid and lemon zest was simply “mindblastic”! Expertly cooked, the squid is soft and sweet, the rice is rich and robust, and the lemon hints a slight zing. Dispel previous notions of risottos being heavy, starchy, and overly cheesey (also known as: a heart attack on a plate); Procacci’s version is perfectly balanced, flavourful, and without a trace of butter or cream. Simply put, this is the only plate of risotto where one portion is never enough.
If you’re a carnivore but tired of the usual steak or lamb chop, we suggest you try their Costata di Maiale or grilled paprika kurobuta pork chop. The cut is so well marbled that cooking it to a medium doneness is just as juicy, sweet, and succulent as a medium-rare but without the pinkness. The dusting of paprika is subtle and doesn’t overpower the natural pork essence. What really surprised us was the attention given to the side dishes! The accompanying rosemary potatoes are so tender and savoury that they could very well be mistaken as the featured item.
Don’t forget to save room for the Crema bruciata allo Zenzero or ginger crème brulee. The fieriness of the ginger is offset by the cool and refreshing custard, which juxtaposes nicely with the crunchy caramel. It’s a winning combination! (Jul 2012)
