Perched on the edge of the water on Singapore's only privately owned island, Privé Waterfront Bar combines absolutely delicious cocktails with a stunning view. With yachts swaying gently in the distance and the sound of waves lulling you into a fully relaxed state, all you need to concentrate on are those amazingly refreshing cocktails you will be ordering.
The drinks are just as good as the ambience. Drinks range from classics done well, such as the Pimm’s Lemonade and the ever-popular Choya Martini, to absolutely scrumptious creations such as the Peanut Butter Chocolate Martini. This mouth-watering combination of Smirnoff Red Vodka, Butterscotch, Frangelico, Morin Dark Chocolate, and Peanut Butter was a big hit with those in the Chope team who often substitute Reeses’ Peanut Butter Cups for a proper lunch.
For food, you can’t go wrong with a variety of excellent bar snacks. The trio of Mini Wagyu Burgers were so good we finished every last crumb, the beef being well complemented by the caramelised onions, truffle mushrooms, and English Cheddar cheese. Other highlights include the Cheese Stuffed Button Mushrooms as well as the Scallop and Bacon Skewers. (Oct 2011)
"(Regarding Privé Bar's DIY cocktails) we're fans – it makes sunsets more hands-on." -Time Out Singapore
“There are great views of the sea and marine yachts – best seen at night from the alfresco bar while sipping on a peanut-butter chocolate martini (S$18), one of their signature cocktails.” -CNNGo.com
“The highlight of the whole Privé experience has to be the sleek waterfront gastrobar which stocks a wide array of drinks, cocktails and with nu-jazz, house and funk tunes pumped out by resident DJs.” -I-S Asia-City
The DIY cocktails were a real treat. Ingredients were stylishly presented, and we even had the ability to make little flavour adjustments, personalising our cocktail experience. More than that however, the range of drinks, and the sheer creativity that went into planning the menu, left us most impressed.
Other than the aforementioned Peanut Butter Chocolate Martini, other tantalising treats include the Apple Raspberry Jello, a fun combination of vodka, Monin Green Apple, Cointreau, and raspberry jello that you can opt to make DIY style, and the Apple Strudel, a lip-smacking blend of vodka, peach schnapps, Monin Green Apple, and Sweet & Sour. Whatever your poison, you’ll definitely find something to suit your fancy on this extensive menu.
I know we talked about it in the ‘About’ section, but the trio of Mini Wagyu Burgers deserves yet another mention. As sliders go, these were amongst the best we’ve had. The patties were moist, cooked perfectly, and the accompaniments really balanced the flavourful beef wonderfully. Best part? As sliders, their bite-sized portions make you feel so much less guilty about indulging. (Oct 2011)

"It’s simple: you choose your cocktail, tools and components are brought out on a tray, you shake it up, pour it into a glass and garnish. It’s a kitschy concept, but we’re fans – it makes sunsets more hands-on. They offer a choice of Caipirinha, Cosmopolitan or Apple Raspberry Jello ($20 each) at Privé. Sister establishment Hacienda is also offering the same experience with the Cosmpolitan, The Perfect Mojito and The Habibi ($16 each)."
